We combined some Anti-inflammatory foods in this dish and it turned out super! If you in some way feel low, have pain somewhere, stomach issues an so on - Try to eat Clean, Green foods with anti-inflammatory benefits, like fermented foods, turmeric, ginger, cloves and veggies! It might be a little help on the way.
Here is a colourful,simple, yet super flavourful dish. Some people might have a problem to eat plain tofu, or Kimchi just like it is, but when you mix them and make patties of them it's a whole new thing! Also the Cauliflower gets a new costume, super easy to blend to a "rice" in a food processor, or simply grate it by hand.
Anti- inflammatory Cauliflower rice, Kimchi/Tofu Patties, Kale and Kombucha infused Cabbage
- 1 Cauliflower1/
- 2 Orange
- 3 cm fresh Turmeric + 1 tsp grounded
- 1/2 tsp cloves
- 1/2 tsp cardamom seeds
- A lot of black pepper
- Sea salt or Himalayan
- Fresh Basil
- 1/2 cup Water
Grate the Cauliflower in a food processor to a rice. Grate turmeric, pound the cloves and cardamom and squeeze the juice from the orange. Combne everything and heat up in a pot on the stove. Just let it be warm, it shouldn't cook for long. - Cabbage salad
- 1/2 Purple Cabbage
- 1 tsp caraway
- 1 avocado
- 1/2 orange
- 1/2 cup Kombucha
- 1 tbsp olive oil
- Sea salt and black pepper
- Fresh thyme
Shred the Cabbage with a mandoline, Cut the avocado in cubes, mix he dressing and combine everything.
Tofu patties
- 1 block of Tofu
- 1/3 cup Kimchi
- 1-2 tbsp Chickpea flour
- 1 tbsp fresh thyme
- 3 tbsp hummus
Blend Everything, form patties or balls and bake in the oven on 225 C degrees for about 10-15 minutes
Kale salad
- Kale
- Kimchi liquid
- Carrots
Shred the kale, cut the caroots and combine!
