Why not make the Pumpkin a little bit more Fancy? If you have a Spiralizer it's easier ;) Otherwise you can use a Potato peeler and do thicker ribbons! The Pumpkin with the flavourful quinoa "salad" went out really yummy and nourishing!

Pumpkin Ribbons, Quinoa and Bean salad with Orange and Tamari

  • ½ Pumpkin
  • olive oil, salt and pepper

  • 1 cup cooked black beans
  • 2 tbsp hazelnuts
  • ½ organic orange
  • 1 ½ tbsp tamari
  • 1 ½ tbsp balsamic vinegar
  • 2 pinches of chili flakes
  • 1 tsp thyme
  • Black pepper

Peel the Pumpkin and use a spiralizer to get long threads of pumpkin. Make ribbons with about 5 threads in each ribbon-length. Roll the ribbon to a circle. Grease them with a little olive oil and toss some salt and pepper on. Bake in the oven on 175 C degrees for about 5-10 minutes.  Zest the orange and squeeze out the juice. Mix with tamari and balsamic vinegar, thyme, chili and pepper. Combine with the quinoa and black beans. Roast the hazelnuts. Put the quinoa salad in each circle, top with cacao nibs, hazelnuts and Chocolate Mint Leaves.
