Yesterday we cooked a bit too much rice and quinoa. But that was perfect just in time for todays lunch! Fried riiiiice!
Rice and Veggie Stir Fry
- 4 dl cooked basmati rice and quinoa tricolore
- 2 tbsp coconut oil
- 1/2 dl kimchi
- 3 celery sticks
- 1 bellpepper
- 1 block of tofu
- 1 lime
- 1/2 zucchini
- 1 pot of parsley
- a handful cashews
- 1 1/2 tsp sesam oil
- 1 tbsp tamari soy
- a dash of apple cider vinegar
- black and white pepper
Chop the veggies and cut the tofu and zucchini into cubes. Fry togehter with rice and quinoa in coconut oil. Add parsley, sesam oil, tamari soy, apple cider vinegar and pepper. Put lime zest and juice into the pan. Fry for some minutes and finally add the cashews.
