Rhubarb Crumble Pie

Crumble Pies must be the easiest and and yummiest dessert! It can also be made all year around since you can fill it with whatever good things you have at home! We always have the freezer full of berries, so that's very convinient, and you can always find apples in the supermarket. But In the Spring, we make Rhubarb pie! We make a lot of things with rhubarb actually. It's nice to do things when it's the season for it! Can't get enough!

The crumble is always made with either nuts or seeds (or both!) and oats, and sometimes with some coconut, and we use dates or raisins or coconut sugar as sweetener.

We tend to make the crumble different every time (like all foods we do...) But here is a "base" recipe:

Crumble Pie

  • 1/2 cup rolled Oats
  • 1/2 cup natural nuts (walnuts, almonds, hazelnuts, cashews, pecans..)
  • 1/2 cup natural seeds (sunflower seeds and pumpkin seeds)
  • a handful pitted dates
  • 2 spoons coconut sugar (less or more, depending on how sweet you want it)
  • 2 pinches of flaky salt
  • cardamom, cinnamon, ginger
  • a spoonful of coconut oil
  • a handul of shredded coconut

Blend everything in a food processor (or just chop the nuts and blend it by hand in a bowl), it should be crunchy and crumbly, so don't blend it too much!

Grease a pie form and fill it with chopped rhubarb and apple, or berries or whatever you may fancy. Top with the crumble and bake in the oven on 175-200 degrees Celsius for about 20 minutes (watch it so it doesn't get burned!)

Serve with coconut cream och some vegan icecream!

Smulpaj

  • 1 1/2 dl havregryn
  • 1 1/2 dl naturella nötter (valnötter, mandlar, hasselnötter, cashews, pecan till exempel)
  • 1 1/2 dl naturella frön (solrosfrön, pumpakärnor)
  • en handfull urkärnade dadlar
  • 2 skedar kokossocker (mer eller mindre beronde på hur sött du vill ha det)
  • 2 nypor flingsalt
  • kardemumma, kanel, ingefära
  • en rågad sked kokosolja
  • en handfull riven kokos

Mixa allt snabbt i en matberedare. (eller hacka nötterna och blada allt i en skål)
Det ska vara crunchy och smuligt, så mixa inte för "fint".
Smörj en pajform och fyll med hackad rabarber och äpple, eller bär eller vad du gillar. Toppa med smul. Baka i ugnen på 175-200 grader i ca 20 minuter, men akta så att det inte bränns!

servera med krämig kokosmjölk eller kanske kall vegansk glass!
